Where to place temp probes?

Just got my first fan controller with a temperature readout. Where do I want to place the probes, especially for the CPU? I know that between the HSF and IHS is a no-no, but isn't the side of the IHS pretty worthless? Ditto on the NB, SB or anyplace else. I mean, you're nowhere near the ideal measurement location, so what's the benefit?

Relevant parts are a DFI X38 LT with stock board cooling, Q6600 with TRUE, and OCZ 8000 Plats. Controller is a Scythe Kama Meter.

P.S. Look for me to break a million after getting this puppy up and running.
